Description

Santoku hocho (三德庖丁)means three purpose knife, namely for fish, vegetable and meat.
It is a multi purpose kitchen knife originated from Japan. Normally it is double bevel, the blade is almost flat and slight curve on the tip which make it very good for cutting fish and slicing vegetable. It is one of the favorite knife among the home cook chef.

Blade:

The blade core is made from Hitachi Shirogami No.2 Hagane (1.3% high carbon steel)clad by high quality stainless steel (SUS410L) from both sides. The blade is hand sharpened by experienced craftsman and has a razor sharp cutting edge. Every blade is heat treated properly to give an outstanding hardness rating of 63 HRc on rockwell scale, ensuring very good edge retention.

Handle:

The handle is made out of beautiful grained rose wood, which is hard and durable. The handle is half tang with 2 stainless steel rivet fasten tightly to ensure durability. Rose wood handle also provide a good grip for user.
