Handle – 104mm, full tang. 3 stainless steel rivets. Material = laminated wood with resin impregnated (antibacterial).
Blade – 120mm, double beveled (80/20). Material = ZCD-U carbon steel (1.05% carbon content with addition of vanadium and tungsten – better edge retention and rust resistance*). Blade hardness – Rockwell c 60+/-
Function:
For small job like cutting, dicing and peeling.
Virgin Carbon Steel – smithed from raw iron. It is very pure and less impurities (very low sulfur content).
*maintenance is important, wipe clean and dry every time after each used to prevent rust.
Hanad Yusuf –
Shaving sharp out of the box. Good mid size in between chef knife and paring knife. Carbon steel takes an extremely fine edge very quickly but some care is required especially if dealing with acidic foods. Depending on how you hold the knife, there’s some minor comfort issue for big hands – dulling down the spine helps with this. Overall great knife, definitely recommended.
